Potato Pancakes (Latkes)..HOW TO Step by step Photographs

The grated potato and salt..use starchy potatoes like King Edward and Russets

the grated onion is added

Then place the mix in a colander over a large bowl and leave for 1 hour ( I went watering my gardens)


The previous 2 are the water/liquid and starch released from the grated onions and potatoes..there were actually 3 glass fulls

The mix with whole wheat flour and beaten eggs do not add any more salt...don't add all the flour as the mix will become watery and you may have to add more flour later on as you fry in batches

Shallow fry in very  hot grape seed oil with 1 tbsp butter

Turn just once

drain on a cooling wire

own made chunky unsweetened apple sauce ( Fuji and Granny Smith apples, can also use Rome Beauties  and Macintosh..any combo of sweet and tart apples works)



The completed latkes draining on wire racks..to be heated by client in 400f oven on brown paper ( the same type used to wrap parcels/clean grocery bags..it draws away any fats from the latkes and helps make them crispy, kitchen paper towels won't work)
