How to and Photos..Vegan cream of pumpkin soup and stuffed vegetables

The weather is nice today, no rain and temperatures rising, should be 75f today with a slight chill in the air as the ground is still damp from all the past rain.
I picked some  broccoli greens from my garden today, and here is the menu for tomorrow's deliveries:

"Cream" of pumpkin soup..deliciously decadent and something which looks like it costs a million dollars..carrots, sweet potatoes, white wine, vegetable broth, leeks, starchy potatoes and I used 1 x16oz organic canned solid packed pumpkin ( do not use the canned pumpkin pie filling as it has the wrong spices, and sometimes fillers and sugars), this year's edible pumpkins have been poor quality, so it is far better to get a good organic canned product for this soup.
 For depth of flavor I roasted the vegetables before making the soup, and finished it with coconut milk.
This is a fantastic Fall-winter soup..the spices are thyme, nutmeg & cinnamon..do not add ground cloves it is too pungent for this dish.

An old fashioned split green pea soup with thyme and mint. The mint makes the soup more refreshing and adds a depth of richness that can be lacking in some vegetable soups

Entrees:
Spanish style stuffed eggplants with mushroom,almonds, tomatoes and oregano & couscous

Moroccan style stuffed bell peppers with green beans, carrots, leeks, couscous, dried apricots and walnuts

(The couscous is flavored with cinnamon, cumin and turmeric, and both stuffed vegetables will have a tomato sauce to bake in...I will add the vegetable mixes to the couscous tomorrow when I fill them for delivery and they will be finished cooking at the client's home.
Always blanch the cut pepper halves ( to be filled) in boiling salted water before filling to ensure a tender dish.)

Then mixed greens ( Inc. own grown) with pine nuts

Dessert : Walnut-toffee-chocolate oatmeal cookies.
