POTATO PUFFS & CHEESY VEGETABLE BAKE.RECIPES For Simple supper dishes


Here are 2 simple supper or lunch dishes...easy to make and very very tasty..also a great way to get the family to eat more vegetables..they are also very old fashioned but always popular dishes.

Potato Puffs serves 2

1 cup mashed potatoes
1/2 cup whole wheat flour
2 large eggs beaten
1 tsp baking powder
1/2 tsp salt
1/4 tsp pepper
hot sauce to taste
dash nutmeg
1 cup defrosted drained sweetcorn/peas or cooked carrots & etc.
2 tbsp grated onion
1 tbsp minced parsley Oil for frying

method

heat the oil for deep frying ( 3 inches deep)

in a large bowl combine the mashed potatoes and eggs, blend thoroughly.
Add all the dry together then add to the potatoes, mix well.
Stir in and mix well the vegetables and seasonings.
Carefully drop by tbsp into very hot oil...cook in batches

Fry until golden brown

drain on wire rack and serve with a light curry sauce or fresh tomato sauce

these are also great with Baked beans.

Variations: add cooked greens and grated cheese..use any freshly cooked leftover vegetables


Cheesy-Vegetable Bake  serves 4

2 cups cooked mixed vegetables..your choice, greens, carrots, beans, peppers, squash, cauliflower, tomatoes,  & etc.
 all cut to same size
2tbsp butter

2tbsp all purpose flour
1/2 tsp salt
3/4 cup milk (nut milk is fine)
1/2 cup grated cheese
1 tsp soy sauce or Worcestershire sauce
2 tbsp bread or cracker crumbs
PREHEAT OVEN 350F

 In a heavy bottomed saucepan, melt the butter, add the flour and cook lightly.

Blend in the milk and add the cheese, salt and pepper.
Stir in the vegetables and sauces ( may also add hot sauce to taste).
Pour into a shallow buttered ovenproof dish and smooth the top
 Sprinkle with the cracker crumbs



BAKE MIDDLE OVEN FOR 25 MINS, until bubbling.
remove from oven and wait 10 mins before serving

make this your own by using any seasonal vegetables, also dried cooked beans.
