Rice wraps with guacamole, Samosa turnovers, sweetcorn and roasted red pepper soup, Masa harina crepes with summer vegetables, lime leaf and lemon grass vegetable curry & rice, Eggplant parmesan, 1 gallon Marina sauce, cranberry sourdough bread, Almond brown butter cake..Monday's Very Veggie Summer menu





I am growing Japanese eggplants in my garden and have been harvesting them for past 2 months!









Yellow squash, Spanish garlic, pink &  orange beets, Russet potatoes

celery, green beans and field carrots

Curly kale

Curly Mustard greens

Great produce from local Farmer's Markets are the ingredients for a very global celebration of vegetarian-vegan dishes for Monday's Menu


Rice wraps with vegetables & roasted almonds with guacamole

Samosa Turnovers ( mild curried vegetables) with fruit chutney

Soups:
Sweetcorn with roasted red peppers
10 Bean with greens
Chunky tomato vegetable

The entrees are:
Masa harina crepes with summer vegetables( pink and orange beets,mushrooms, yellow zucchini, carrots, green beans) cooked in coconut cream & grated cheese

Lime leaf and lemongrass mild curried vegetables with steamed brown rice

Eggplant Parmesan & steamed spaghetti squash

The side chosen is kale and curly mustard greens with garlic


The bread and desserts:

Dried Cranberry sour dough

Fresh fruit salad with jicama(honeydew melon, strawberries, apples, stone fruit, oranges)

Fresh Apricot-nectarine all butter crumb cake

The above photos are from Sta Monica Farmer's Market and Traders Joe's, west Los Angeles, this morning and also my purchases air drying having been plunge washed.
