Lentil and scallion pancakes, Tacos filled with potatoes and cheese, Cashew "Paella, Wholewheat berry & Nectarine cakes, miso soup, Carrot & Yam soup, a simple menu celebrating the diversity of vegetables


Previous 2 the miso with yams,& spinach


Previous 2 the lentil and scallion pancakes with wholewheat flour, eggs and cooked lentils.To be served with minted sourcream


Previous 2 the filling for the soft tacos and will add grated cheese tomorrow..fill the soft corn tortillas and then cook in a dry skillet like a quesadilla




The rice for the paella




Previous 4 mixing the nectarine and blueberry cakes..recipe on this blog under "Berry Cake", I also added whoewheat flour  ground cornmeal and sour cream/milk to mine.
