RECIPES: 2 VEGETARIAN "MEATLOAVES" CARROT-PECAN LOAF & PECAN LOAF



Here are 2 great recipes using "All American" pecans, you may use walnuts instead.


Both mixes are best prepared the day before baking, as this intensifies the savory flavors


Carrot Pecan Loaf

Serves 4 - 6

10 medium carrots (3 pounds)
2 cups milk (nut milk is fine)
3 large eggs
1/2 cup minced onion
1/2 tsp sage
1tsp Worcestershire sauce
1 tbsp Dijon mustard
2 tbsp melted butter
2 cups dried/toasted breadcrumbs
2 tbsp nutritional yeast
1tsp sea salt
1/2 tsp ground black pepper
1 cup chopped pecans

Chop the carrots small and cook in boiling salted water until tender, drain and mash.
Beat the eggs, adding the milk, onions, yeast, carrots, sage, Worcestershire sauce, butter, mustard, mix well then fold in the breadcrumbs salt and pepper.
Add the chopped nuts, mix well.
Place in dish and cover and chill overnight.
Next day

Preheat oven 350F

Remove the nut mix and pour into a buttered loaf pan or deep casserole.
Bake uncovered for 1 hour on a lined cookie sheet.
remove from oven and cool in pan.
When able to handle, turn onto serving plate.
This is easier to slice when cold.

Serve with mashed potatoes or baked potatoes and mushroom sauce




PECAN LOAF

1/4 cup butter
1 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup whole wheat flour
1 tsp sea salt
1/2 tsp ground black pepper
1 1/2 cups milk
2 cups chopped pecans
2 cups cooked brown rice
2 tbsp minced parsley
4 large eggs beaten
1/2 cup fine dry breadcrumbs

 1 greased 9x5x3inch roasting pan or casserole

melt butter and add, celery, onion and pepper and saute for 3-4 mins, sweat without coloring.
 Add the flour, salt & pepper and make a roux, then slowly add the milk to make a thick sauce, stirring constantly.
Remove from heat.
Add remaining ingredients when it has cooled for 20 mins, mix very well and place in a bowl then when cool, cover and chill overnight.


Next day

Preheat oven 350F middle shelf.

Pour the mix into a greased pan

Bake 30-40 mins until set.

Remove from oven and allow to cool before slicing.

Fabulous as a substitute for roast turkey  for Sunday dinner or at Thanksgiving.
This makes great sandwiches too
