Banana bread, Zucchini bread and Apple cobbler.RECIPES GALORE #2






I thought I would give you some old American recipes that are good for Summer Party Planning or just to have at hand, here goes:

Pecan and cream cheese tarts (may also be made with walnuts)
for the pastry:
3 ozs cream cheese at room temp.
1/2 cup ( 4ozs) unsalted butter also at room temp
1 cup sifted all purpose flour

Blend together the fat and cheese and then stir in the flour.
Chill for 2 hours, then shape into 24 x1 inch balls ( this is for mini muffins you may make larger ones, if so alter the baking time to 45 mins+)
Press the dough into muffin/cupcake molds and press dough against the bottoms and sides.


Pre heat oven to 325F

The filling:
1 large egg
1 tbsp soft  unsalted butter
1 drop almond extract
3/4 cup brown sugar
1 tsp vanilla extract
pinch salt
1 cup broken nut meats

Beat the egg, sugar, and  butter, adding the salt and extracts, until mix is smooth.
divide half the nut meats in the bottom of the muffin cups, add the egg mixture, and top with remaining nut meats.
Bake in oven approx 25 mins or until the  filling is set.





Frozen Cranberry Salad or Mississippi Frozen Salad for those hot summer days, lazying on the front porch,under the shade of a Jacaranda Tree in full bloom


6ozs room temp cream cheese
1/2 cup chopped pecans or walnuts
1/2 pint whipped cream
1 14ozs  can whole cranberries
2 tsp mayonnaise
2 tsp sugar
6 ozs finely chopped/grated fresh ripe pineapple

method:
whip the cream cheese, add the mayonnaise, sugar, and pineapple.
Add the cranberries and nuts.
Gently fold in the whipped cream.
Pour into a mold and freeze overnight..unmold and serve with mixed greens




Marinated carrots

2 pounds carrots
2 medium brown onions
1 large ripe bell pepper
1x14ozs can chopped tomatoes in juice
1/2 cup olive oil
3/4 cup wine vinegar
salt & pepper to taste
1/4 cup sugar or honey
2tbsp any chopped fresh herbs of choice
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
2 chopped scallions

Chop the carrots into rounds and simmer in water until just cooked, cool, drain and place in a bowl.
Finely slice the onions and bell pepper and add to the carrots.

using a blender beat the remaining ingredients until smooth then pour over the vegetable mix.
Stir well to cover then place in fridge and chill overnight..great with any green salad or as a cold side dish with any entree




Eggplant Creole

1 large eggplant, peeled and diced
3 tbsp unsalted butter
3 tbsp flour
3 large fresh tomatoes or 2 cups canned diced
1 small green pepper
1 small brown onion
1/2 cup stock or water
1/2 tsp salt
2 bay leaves
dry breadcrumbs
grated cheese (optional)


pre heat oven 350f

Cook the eggplant in boiling salted water for  10 mins, , drain and place in a buttered baking dish.
Melt butter and add the flour and stir well together, add the finely chopped onion, and the chopped bell pepper and tomatoes, salt and bay leaves, stir well and add the butter and stock.
Cook for 5 mins on high simmer.
Pour over the eggplants and cover with breadcrumbs ( add grated cheese).
Bake 30 mins remove from oven and wait 10 mins before serving so contents settle.



They are Really this good!!


Oatmeal muffins 12 cup cake sized muffins

1 cup milk ( can be nut milk)
1 large egg
2 tsbp sunflower seed oil/canola oil
1 cup whole wheat flour
3/4 cup quick-cook oatmeal
1/4 cup sugar
1 tbsp baking powder
1 tsp salt
 1/4 cup dried fruit ( optional)

Pre heat oven 400f

greased only the bottoms of the muffin cups

Stir milk, oil and egg together, add remaining ingredients ( except the dried fruit if using) ....and stir until the flour is just moistened...batter will be lumpy.
Stir in dried fruit.
Spoon batter into cups, filling 2/3 full.
Bake 20- 25 mins until golden brown and toothpick inserted comes out clean



Dragon Lilies

Zucchini Bread..an American Classic

3 large eggs
1 1/2 cup sugar
1 cup vegetable oil

2 cups peeled and grated raw zucchini


3 cups whole wheat flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp  salt
3 tsp ground cinnamon
1 tsp ground allspice
1 tsp ground cloves
1/2 tsp ground nutmeg
1 tsp vanilla extract

Beat together the first 3 ingredients.
Then add the grated zucchini, and stir well, sift together all the dry ingredients and stir to combine with the wet.
Fill greased loaf pans 3/4 full and bake in 350f oven for 30-40 mins until golden brown and firm to the touch..cool on a wire

may also add 1/2 cup dried fruit


 Banana Bread

1/2 cup unsalted butter at room temp
1 cup brown sugar
2 large eggs beaten
3/4 cup mashed very ripe bananas
1 1/4 cup all purpose flour
3/4 tsp baking soda
1/2 tsp salt

pre-heat  oven 350f
Cream together the butter and sugar, until light and fluffy, add the eggs and beat well.
Stir in the  bananas & the dry sifted ingredients, until well mixed.
pour into a greased 9x9x2inch greased baking pan
bake 30 -35 mins

cool on a wire in the pan.





Apple cobbler cake serves 10..great for a big party!

Pre heat oven 350f

1 1/2 cups vegetable oil
3 large eggs
2 cups brown sugar
2 tsp vanilla extract
blend together

3 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
Sift together and add to the wet mix

fold in:
1 cup chopped pecans or walnuts
3 cups chopped fresh apples, cored but not peeled


Pour into floured and greased pans

bake for 1 hour


Topping:
melt together 
1/2 cup milk ( can be nut milk)
4 ozs/ 1 stick unsalted butter
1 cup brown sugar

and pour over cake when it comes out of oven...let stand 1 hour before serving
