Split yellow and green pea soup with yams; Barley pilau with mushrooms and bell peppers; Mashed yams with wildflower honey and caramelized pecans; cucumber dill potato salad with yogurt & mayonnaise..Photos of prep for tomorrow

Butter and honey mashed yams topped with sauteed yams and honeyed pecan pieces with cinnamon.

Mushrooms, bell peppers and own grown eggplants the base for the steamed barley pilau

peeled, seeded and salted cucumber pieces for the salad

The completed dill & cucumber potato salad with yogurt and mayonnaise

Butter mashed yams with honey

Sauteing more yams pieces with olive oil and pecan pieces, will then also cook in a little water to steam cook and add more honey and cinnamon



Having cooked with mainly vegetables and grains for the past 3 years I now appreciate how adaptable they can be.
Today's yam and pecans came from a "mistake" I under boiled the large yam so I cooked the remainder in a wok with pecan pieces and the results are fantastic, butter mashed topped with honey glazed pecans and yam pieces..so there is more texture than just plain mashed yams and honey-cinnamon!
