Bourbon scented Baked Sweet Potatoes (Yams) Southern American Style RECIPE, can also be made Vegan.




Sweet Potatoes

Garnet Yams


Please do NOT make this with Canned yams...they are awful & wet.

This serves 6-8


4 pounds yams
1 stick butter (4ozs)..If cooking vegan use vegan margarine
1/2 cup bourbon (4ozs)
1/2 cup orange juice
1/4 cup firmly packed brown sugar
1tsp salt
1/2tsp ground cinnamon
1/2 tsp ground nutmeg

1 cup chopped pecans or walnuts

Wash the yams well and bake in a 350F oven for about 1 hour or until they are soft (this gives an intense and very dry texture).
PREHEAT OVEN 350F
Peel and mash the yams in a large bowl and add all the ingredients (except the nuts) in order given.
pour into a buttered 6 cup/3 pound baking dish/ovenproof casserole.
Sprinkle the nuts over surface.
BAKE FOR 45 MINS or until it is lightly browned.
Serve warm or room temp. 

This is a fantastic side dish and can actually be served as a dessert with sour cream, or poured into a baked pie crust (goes great in a cookie crumb crust).
