COTTAGE CHEESE CROQUETTES recipe for Home entertaining or snacks

HERE ARE SOME TASTY BITES.

These are great served with hot salsas, sour cream dips or just ketchup and chutney.

Simple and easy to make too.

1 cup small cottage cheese
4tbsp gated Cheddar (or any cheese available if using Parmesan just use 1tbsp)
1 large egg beaten
3-4 tbsp whole-wheat flour
salt & pepper to taste
hot sauce optional
2 tbsp minced parsley,scallion or any other fresh herb (optional)
oil for frying.

Method:
Mix cheeses, egg, flour, seasoning and herbs together in a bowl.
Then on a lightly floured board, knead until it is firm and holds it's shape.
Form into walnut sized balls and allow to rest for 1 hour.
Fry in 3 inches deep hot oil, until golden brown, also fry in small batches to keep the oil hot.
When golden brown drain on absorbent paper or wire rack.
Serve at room temp.
Fro parties serve with toothpicks.

These are also good for picnics and lunch boxed meals.
Any sized curd cheese will work, as it is kneaded anyway.

Variations: Try adding minced bell peppers, sweet pickle minced, minced mango chutney, dried fruit, chopped nuts.
