Vegan Tomato soup; Chickpea Koftas with lime dipping sauce; Vegetable and cheese tarts; Corn Cannelone; Mixed salad with Pita and lettuce; Apricot-vanilla Vegan Thumbprint cookies/cakes PHOTOS AND INFO




Corn tortillas filled with cooked  vegetables in a tomato basil sauce topped with cheese, to be baked at clients home

Lime juice, reconstituted dried figs, and oranges cooked in a light syrup, blended for the Kofta dipping sauce



Vegan, ( own made applesauce replaces eggs) apricot ( apricot jam and reconstituted dried apricots) thumbprint cookies/cakes. By mixing equal amounts of jam fruit the result is a less sweet cookie, but intense fruit flavors


With these dishes it is easy to eat well over 5 servings of fruit and vegetables a day. always add more vegetables to any recipe and where you can incorporate fresh or reconstituted dried fruit ( figs, apple slices, raisins, prunes, apricots & etc.) in place of processed sugars.
