ALL VEGETARIAN!! Squash Pancakes & Turnip-Tomato Patty Bake MORE Money Saving Recipes



Here are 2  MORE great money saving recipes that will serve 3-4 persons


Zucchini Pancakes

You will need either 4 cups mashed cooked zucchini or the same amount of grated raw zucchini
2 cups grated cheese (optional)
Salt & pepper to taste
2 large eggs beaten
herbs to taste
1 ripe bell pepper minced
2 cups flour
Bread crumbs to coat
1/2 cup cooking oil

Mix the squash, seasonings and herbs.
Mix very well before adding the cheese and minced pepper.
Shape into small flat cakes and dip in flour , egg and breadcrumbs..shaking off excess.
Fry in hot oil in small batches until golden brown on both sides.
Serve warm with salsa, ketchup or mayonnaise.
This is great with any cooked and mashed squashes or sweet potatoes!





Turnip-Tomato Patty Bake

3 cups cooked mashed turnips
1 stick butter or margarine
4 -6 medium tomatoes sliced
salt & pepper to taste
herbs and hot sauce to taste
4tbsp. grated cheese
2 large eggs beaten
1 can condensed mushroom soup*

4 tbsp breadcrumbs mixed with 2 tbsp grated cheese
2 tbsp butter


Fry the sliced tomatoes in butter.
Remove and set aside.
Mix the mashed turnips with salt and pepper, herbs, hot sauce and 4tbsp grated cheese.
Shape into very thin patties.
Dip these in the beaten eggs and fry in the hot oil the tomatoes were cooked in.
Brown on both sides then remove and set aside.
Pour the condensed soup in the same skillet, and heat through.
In a buttered deep ovenproof casserole , place one layer of tomatoes, then turnip patties, repeat until all is used.
Pour over the hot thick soup.
Sprinkle with breadcrumbs and cheese.
Bake in preheated 375F oven for 35-40 mins until golden brown and bubbling.
Wait 10 mins for contents to settle before serving.

This is also a great idea to use with any cooked and mashed vegetables ..perfect for "finnicky" kids and adults too.
*use any condensed soup or vegetable stock/gravy
