Monday's menu...Soups and stews

Great menu for this somewhat colder weather we are having.


3 soups:
2 Spanish, one a cooked Gazpacheo with roasted tomatoes; the other from the Island of Majorca with cabbage and sherry; and a roasted red pepper with ginger.
3 great stews..complete meals in a bowl that will be served with some fresh pineapple- jalepeno salsa

 Black bean  with roasted garlic and cilantro

South east Asian with cauliflower, broccoli and green beans in a coconut-nut butter chili sauce

An Italian Style tomato and eggplant with mushrooms and red wine

(When making some Vegetarian/Vegan stews, it is important to develop the sauce without overcooking the vegetables. This is why I remove the vegetables once they are cooked and then reduce and add more herbs/wine etc to the sauce. Then add it to the vegetables once I am satisfied with it.
With meat based stews the meat is the "star" of the dish so they are cooked longer, & the vegetables become overcooked and mushy, this has to be changed when cooking Vegetarian/Vegan.)


An Asian inspired Caponata with eggplant, red bell peppers and basil and ginger

and then some walnut/toffee cookies and a some sour dough malt and raisins breads

I am just waiting for my sour dough starter to bubble so here is what I have completed so far.
