Bean Dips, Pesto stuffed mushrooms, pasta e fagiole, mushroom soup w/yogurt, curried lentils w/spinach

We are very lucky in Los Angeles that we don't have any real seasons...lol.
Mainly just a long Spring that lasts 6 months and a Summer to match...the Fall only lasts 3 weeks, the leaves drop and 3 weeks later new buds appear.
Winter weather can hit us in the middle of June, which is usually the cloudiest month as we are prone to low clouds covering the basin..June Gloom!
So now we are headed to another mini-heatwave, today and Monday it is going to be in the mid 90f's so I will have to move a lot of my plants around to some shade and also cover my roses with beach umbrellas..these are the perks of living on the edge of the Mojave Desert, also living on the western edge of America and with a few earthquakes thrown in, so life is never dull.
In Palm Springs today it is going to be 105F!
Tomorrow morning I will be up at 5am preparing for delivery!






 

For Monday's menu I am creating a complete mix of vegetarian and vegan dishes, my clients have chosen the following dishes for their delights:

A mixed bean hommus.( below 3 photos) more fiber and flavor from cooked baby Lima Beans & chickpeas, with tahini, garlic, lemon juice..this will be served with tortilla chips





The soups:
Chunky Tomato  w/mushroom tortellini
Pasta e fagiole..baby Lima's with pasta & vegetables
Mushroom w/yogurt

The entrees:
Spinach & Walnut Pesto( 3 photos below) stuffed Portobello mushrooms w/ whole wheat couscous and grilled tomatoes






Eggplant -tomato Pasta bake w/cheese

Potato salad with yogurt and lime, mint and mayonnaise



Eggplant "steaks" ( grilled w/olive oil, walnuts and herbs) with goat cheese and a cucumber-mint salsa

The side dish is Curried lentils w/kale





Desserts/Bread:
Walnut-own dried fig, Raisins Oatmeal, nutmeg cookies 

Carrot cake with apple, walnut and dried fig

Sourdough fresh spinach, green olive, caraway whole wheat breads
