Eggplant Braciole; Minestrone Soup; Roasted Vegetables; Mango and Apple Bar cookies; Apple Crisp; Pumpkin Pie all Photos for tomorrow's delivery

Hearty Minestrone and I am also making a Tomato-basil soup

The rice and vegetable filling for the Braciole, usually made with raisins and nuts with cheese, my clients cannot eat nuts and dried fruit so I have opted for sauteed vegetables with grated Parmesan Cheese, when the vegetables cool down I will add the cheese

Baked slices of eggplant for the Braciole and the roasted vegetables

The eggplant braciole, will be topped with more fresh tomato sauce before baking at Client's home

Roasted vegetables ( yams, potatoes, zucchini. yellow grape tomatoes, onions, and artichokes) to be served with couscous and also baked in a tart with cheese

Apple crisp..cooked apples topped with an all butter-whole wheat shortbread crumb

Roasted vegetables finished with lemon juice &basil

Apple & Mango Crumb  bar cookies to be cut into bars when cold...also making double chocolate chip bar cookies
