BERRY BERRY EASY FRESH FRUIT NAPOLEONS RECIPE/TIPS

I am posting this on this blog as it is a simple recipe/tip for Summer Eating.

Make it with any fresh fruit

Serves 4

2 cups Fresh ripe fruit (sliced strawberries, blueberries, peaches, nectarines, blackberries & etc.)

1/2 cup apple juice or water

2 tbsp sugar (optional depending on ripeness of fruit)

pinch of sea salt

Cornstarch and water/apple juice to thicken

Plain live yogurt

 8x unbaked 4 inch squares of puff pastry

Method:


Place the fruit and apple juice in a pan and bring to rolling boil then turn down to very low simmer.
Add the sugar and cook for 8-10 mins.
Add cornstarch to juice or water and add to the fruit mix and continue cooking until the mixture thickens.
Remove from heat and pour into a bowl to cool completely.



Meanwhile
Preheat oven 400f top shelf
Place the pastry squares on a baking sheet and brush with egg wash, sprinkle each piece with sugar and ground cinnamon (optional)
Bake in hot oven for 10 mins until tops are risen & golden brown then turn oven down to 350f and bake for a further 5 mins  to dry out.
Remove from oven,  and when cool enough to handle, remove from cookie sheet and place on wire rack to completely cool.





Assembling of the cold ingredients


Mix 1 cup plain live yogurt with half the fruit mix.

Lay one of the puff pastry squares on a cold dessert plate and top with  a spoonful of the yogurt and fruit mix, then a spoonful of the poached berries.

Top with another baked square and serve.

These are lower sugar and fat than the usual ones make with whipped cream and powdered sugar treats.
The flavors are fantastic.
