LATTICED FRUIT-CREAM PIE A GREAT/EASY RECIPE FOR ANY SEASON



Here is a great recipe for a fruit pie that almost tastes like a cheese cake and can be made with any fruit including dried fruit.
if using dried fruit, please cook for 5 mins in 1 cup of  water, drain and allow to cool before using.


Makes a 9 inch pie


PREHEAT OVEN 425F middle shelf


 2x 9 inch pie crusts (one rolled and cut into 1/2 inch wide strips for topping the pie)

3 cups dried fruit OR  4 cups fresh fruit, (berries, sliced apples, pears, peaches, nectarines, all chopped into small pieces (1/2 inch cubes))

1 cup water

1/2 cup sugar
2 tsp cornstarch
pinch sea salt
2 tsp lemon peel/zest
juice 1 lemon
1/2 cup chopped walnuts (optional)
1 cup sour cream


Line a 9 inch pie pan with the pastry.
Simmer the fruit in water for 3-5 mins.
Adding the cornstarch, sugar and salt, and gently cooking until thick.
remove from heat and allow to cool, adding lemon juice and zest.
Fold in the nuts and sour cream, then spoon into the unbaked pie shell.
Cover with crisscross pastry strips, sealing at edge.

Bake on a cookie sheet for 40 mins or until pastry is golden


Variations:
You may egg or milk wash the lattice and sprinkle with sugar before baking.
