CANCER FIGHTING, CABBAGE FAMILY AND COLESLAW SALAD RECIPES


These are ideas for salads using all manner of vegetables from the Cabbage family, collard greens,mustard greens, kale, broccoli & Broccoli leaves..these are all edible and all very strong cancer prevention vegetables.
For tough Green vegetable leaves, remove the rib (the thick stem that runs through the center of each leaf) and very thinly slice (known as chiffonade).
If you cannot get the tough Cabbage Greens then by all means use regular green cabbage, broccoli and/or red cabbage, just eat more cabbage greens weekly!

The perfect dressings for these salads are any of the Marinade  dressing recipes given on today's blog.
Dress and wait 25-45 mins before eating this allows the lemon juice to break down the tough leaves.


CABBAGE SALAD  makes 4 cups
2  cups shredded green or red cabbage
1 cup very thinly sliced Greens

1/2 cup grated carrots
1/2 cup chopped celery
2 minced green onions

Variations:
add 1/2 cup minced parsley or cilantro; and/or 1 cup seedless raisins on serving






GOLDEN CABBAGE SALAD makes 4 1/4 cups

1 cup grated carrot
1 cup grated yam (raw)
2 cups grated/thinly slice cabbage/greens
1/4 cup grated raw beet (optional)




COLE SLAW basic recipe 4 1/2 cups & Dressing/MARINADE



1 cup grated carrots
1/2 cup grated beets
2 cups grated/thinly sliced greens (red or green cabbage instead of greens)
1/2 cup chopped celery
1/2 cup minced onion 
2 tsp caraway or cumin seeds

Dressing
1/4 cup olive oil 
1/4 cup lemon juice or cider vinegar
1/2 tsp tarragon
1/2 tsp honey
1 tsp ground kelp, dulse or nutritional yeast
2-3 cloves garlic smashed and minced.
Marinate overnight and take out 1 hour before serving, mix well then add 1/2 cup minced parsley, basil or cilantro and mint.


Variations to any of these salads is to add chopped nuts and or any dried or fresh fruit on serving.
