A Boer War Sandwich & Jolly Boys...MONEY SAVING recipes from over 100 years ago



Here's a recipe from a soldier from that war (1899-1902) and I expect it is one of the first "toasted" Sandwich recipes ever.





Makes 1 sandwich

2 slices of good bread

1 tbsp butter
1/2 tsp prepared mustard or horseradish
1/2 cup grated cheese
salt & pepper to taste
1 large egg at room temp.


Method:
Beat the butter, mustard and egg until smooth.
Then fold in the grated cheese and season.
Spread over one slice of bread and top with the other and press down.
In  a lightly oiled skillet fry until both sides are golden brown turning once.





"Jolly Boys" This is from 1900's North of England
For when fresh eggs are scarce/expensive


Serves 2
2 tbsp flour
pinch of salt
1 large egg






Method:
Whisk together and add enough milk to make a thick batter( runs thickly from back of a wooden spoon)
Heat oil or fat in a skillet and put tablespoon fulls of batter into the hot oil.
It will form ovals and rise up as it cooks, baste with hot oil as one does with fried eggs.
Serve hot with home fries, tomatoes, baked beans.
