CHAYOTE SQUASH FILLED WITH VEGETABLES & RICE ITALIAN STYLE; ALL VEGETABLE VEGAN "CREAMED" SOUP; ROASTED VEGETABLES..PHOTOS OF PREP FOR TOMORROW'S ALL VEGAN DELIVERIES

Tomato & squash sauce  base for the rice stuffed chayote squash

" 1 gallon" Tomato Sauce

Vegan Soup on high simmer

Roasted vegetables drizzled with fresh lemon  juice

The wonderful, blended, vegan soup with  almond milk and coconut cream

The stuffed chayote squash, the client will add more tomato sauce and then bake in oven for  30 mins at 350F lightly  covered


A simple  vegan menu for just after Christmas, my usual bread client is off in Antarctica for a few weeks tagging penguins, so no bread for a week or 2.
Here it has been cold for Los Angeles, not quite as cold as the South Pole, ( 63f daytime and 46f evening) also bright blue skies and sunshine, these photos I took today....(the sunset is last night's over Sta Monica bay).
