Something quick to "spice up" any dish

Here's a quick tip.....
to make use of fresh herbs and "spice up" any dish, from appetizer to entree; economical and seasonal.
In a small blender mix ( or mortar and pestle)..good extra virgin olive oil, sea salt  (optional) fresh herbs ( with thyme, and rosemary remove the tough stems)..blend  on high speed, to form a paste.

Add more good olive oil and use a a drizzle on anything just before plating or at the table ( the use of extra virgin olive oil implies this should not be cooked in any way)..great for spicing up salads, soups, dips, cheese plates, salad dressings, pizza, any meat or fish entrees,vegetable stews, all kinds of pasta dishes.
Use whatever herbs are in season or available locally and to keep it as fresh as possible only make it when you need it.
You can vary the mix by adding 
garlic,
red pepper flakes,
sun dried tomatoes,
mushrooms,
sprouted nuts  ( soaked over night especially raw almonds)
sprouted grains
pink peppercorns,
zest of citrus
the list is endless..whatever your taste, or dish 

this is just to accent the flavor or spice it up in case, the vegetable stock was not strong enough, you didn't add any wine to the dish, the veggies are lacking in flavor..whatever..it works a charm and no one will be surprised more than you the difference it makes.
