Making meat obsolete..fantastic Vegetarian Treats.photos

in the "olden days"...2 decades ago, it was popular to add a salad or small portion of cooked vegetables to a large meat protein..ie. steak and salad, beef with broccoli, chicken with broccoli & etc.
Now in the 21st Century the "tables" are turning.

Today I have prepared 2 fantastic ways of enjoying vegetables, where the addition of meat is obsolete, in fact it would be surplus to add.

They are both "Old world" type of dishes, (a strudel and a gratin) not used much, but times are changing and these are going to become popular again  and  anyway they are far more tasty and healthier than meat.
Cheese in both cases is optional, it can be replaced with nuts, or even nut butter, and/or cooked tempeh, cooked beans.

These strudels have become one of my most popular choices..easier to eat than a sit down meal..and can be hand held when served at room temp.

The gratin is to be baked at the client's home, and is fantastic made with kale and sun-dried tomatoes, Greek yogurt, Cheddar cheese, onions, garlic; topped with fresh breadcrumbs with avocado oil , Parmesan cheese & chopped basil..fabulous and so good for you.
