RECIPES.CHILE CON QUESO, QUESO AL HORNO

When it is time to "splurge" on these summer parties and out door BBQ's one might as well "do it in style'!

These recipes have been around for years and although quite popular in the late 80's it is time they were brought out of the attic and made use of again..also dust off your old fondue set..it is coming back.

A wonderful Queso al horno...oven or BBQ baked grilled cheese with chiles, tomatoes and beans..serve with the chips.
This can be prepared in morning and baked in afternoon or evening

1 tbsp oil
1 cup chopped onion or 4 scallions 
3 large tomatoes ( 2 cups) chopped
1 x 10 oz can  cooked beans,( your choice) rinsed and drained
1/4 tsp cinnamon
4 fresh jalapeno's ribs removed and chopped or 1 x4oz can chopped green chiles drained and rinsed
2 pounds Jack or Munster or Chihuahua cheese
for garnish 1 whole jalapeno chile In a large skillet saute the onion in oil and add the tomatoes, and peppers, cook for about a minute, then add the beans, ground cinnamon, salt and pepper and remove from heat. Set aside. ( and when cool store in fridge for up to 4 hours)

Take a  8 x 10 inch oven proof, greased dish, line with slices of the cheese, overlapping.
This can now be left covered for up to 4 hours refrigerated.

To cook:

pour the tomato mix, over the cheese slices, sprinkle with any dried herbs of choice, top with the whole jalapeno, and bake covered on BBQ grill approx 6 inches above hot coals.
As the cheese melts move to cooler side of BBQ and offer chips, bread or veggies to scoop up the melted cheese and sauce


A Fondue type melted cheese also with chiles, and heavy cream..well we ARE Splurging!!
Chile con queso..melted cheese dip

1 tbsp oil
1 cup chopped onions
1 x 4 ozs chopped chiles, rinsed and drained
1/2 cup heavy cream
1 cup shredded Longhorn Cheddar, Chihuahua cheese
Vegetables for dipping

In a 3 qt heavy bottomed saucepan, heat the oil & cook the onion.
Add the chopped chiles and the cream and stir slowly, until hot, (bubbling at the edges) add the grated cheese and remove from direct heat, continue stirring.
pour into chaffing or fondu dish and offer veggies and chips for dipping.

Everyone will love this even children of all ages!!
