LEBANON COUNTY PEACH CAKE; RHUBARB -STRAWBERRY COFFEE-CRUMB CAKE OLD FASHIONED RECIPES with Summer fruit


THE LEBANON COUNTY IS IN PENNSYLVANIA AND IS A FIRM FAVORITE THAT HAS BEEN AROUND FOR HUNDREDS OF YEARS AND HAS TO BE MADE WITH FRESH RIPE SUMMER PEACHES:

Lebanon Ripe Peach Cake
Preheat  oven 350F middle shelf
2 cups all purpose flour
3tbsp sugar
1 tbsp baking powder
1/2 tsp salt
Mix together well

then cut in 1/4 cup unsalted butter/margarine.until mix resembles breadcrumbs.
Then gently add 1 egg, and 1 cup milk.
Mix well and then pour the batter into the bottom of a well greased  11x 7 x 2inch pan/baking dish.
Cover with fresh peach halves cut side up or sliced
Sprinkle with a mix of 
2tsp sugar
1/2 tsp ground cinnamon

Bake for 35 mins.
serve warm with vanilla bean ice cream or cream
variations use any summer fruit at it freshest and ripest

You can make either recipe in individual pie tins, bake at 350f instead of 400F


RHUBARB-STRAWBERRY COFFEE-CRUMB CAKE

here's another one that is baked in a 13 x 9 x 2 inch oven proof dish and is fantastic, and may be made with any fruit other that rhubarb, picked at it's freshest and sweetest summer ripeness

PREHEAT OVEN 350F middle shelf

3 cups all purpose flour

1 cup sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
 Mix together well then cut in:
1 cup cold butter or margarine, mix to "breacrumbs stage".
Then gently fold in:
1 cup plain yogurt
2 large eggs beaten
1 tsp vanilla or almond extract

Spread half over the greased oven proof dish.

Spread the cooled fruit filling (recipe follows)
Spoon remaining batter over the fruit in small mounds.
Then top with the following mixed together to "crumb stage"

3/4 cup  packed brown sugar
1/2 cup all purpose flour
1/4 cup cold butter or margarine


 Bake 40-45 mins until top is golden brown.
remove from oven and wait 20 mins before slicing

Serves 6-8

Fruit Filling:

1 pound fresh rhubarb cut into 1 inch pieces
1 pound fresh strawberries sliced
cook over heat and add 
1/4 cup water or apple juice
2 tbsp lemon juice
Add 1/2 cup sugar
cook to simmer for 5 mins.
Then thicken with 1/3 cup cornstarch and 1/2 cup apple juice or water.
Remove from heat and allow to cool 
Check for sweetness
Variations:
May also use ANY fresh Summer fruit, (peach, apricot, nectarine, plums & etc.) for stone fruit remove the stones/pits.

May also add 1/4- 1/2 tsp ground cinnamon
