Cooked avocado-corn soup, lentil and kale soup, daal soup; Spicy plantain, Summer squash and roasted corn, refried beans with tempeh, how to peel a plantain..PHOTOS OF THE COOKED PREP AND ALSO MORE OF THE RAW FRUITS & VEGGIES

Previous 2 Nopals ( prickly pear cactus paddles) and carrots

cilantro, parsley and scallions

Tomatillos in husks..the husks are good to cook with the nopals to reduce the stickiness


previous 2 fresh mangoes, peaches and limes

cooking the nopals with tomatillo husks in salted water with added lemon juice


previous 2 the avocado-sweetcorn soup finished with coconut cream

cooked nopals..these are great for controlling blood sugar

plunge plantains in boiling water for 3 mins, then blanch in cold water and peel very easily


previous 2 ..roasting the corn directly over the flames, creates a good char and some caramelization.


Previous 2, the peeled plantains being quickly sauteed one side only for the chocolate-chipotle sauce


Previous 2 refried pinto beans with sweet bell peppers and zucchini with tempeh

Eggplant with cherry tomatoes ( own grown) and cinnamon, basil, this will be served with a steamed millet pilau


previous 2 the plantain & zucchini with white beans, cooked in a chocolate-chipotle sauce.Finished with raw celery to add texture to this wonderful spicy dish

previous 3 roasted corn and Summer squash in a coconut cream sauce with fresh ( own grown tomatoes and nopals)
