Blueberries are in season now in USA..make more of them.RECIPES...Ideas & photos



Did you  know
Blueberries act as an unusual type of antibiotic by blocking attachment of bacteria that cause urinary tract infections; and contain chemicals that curb diarrhea.
Also antiviral activities and are high in natural aspirin?

They can be used in salads..just lightly wash, air dry then, used in,
 RAW:
Green salads  ( use 1/2 cup minimum, per portion)
(spinach/kale, walnut and blueberry salad with lime and olive oil dressing is superb on a hot Summer's day)
Fresh Fruit salads
Smoothies
Shakes
Rice and pasta pilafs, with salted roasted nuts, spices and vegetables..delicious
Salsas
Breakfast cereals
Rice pudding/semolina in place of jam or raisins
Great with hot oatmeal 
Chocolate mousse..add to the base of the glass or dish and top with mousse
Trifles ( see mousse)
Fruit Jellies/jello


COOKED  ( lightly poach in water, add a little natural sweetener if they are under ripe only)
OR DEFROSTED:

Muffins and quick breads ( lemon-blueberry cake is wonderful, and the fresh berries( dusted in flour) stay in the cake rather than sink to the base)
Yeasted breads (they are great added to cinnamon and pecan rolls)
pies, tarts, small cakes,turnovers,
Cookies.any recipe except refrigerator where the cookies are cut from a log)
Crepes/stuffed French toast and pancakes..added to ricotta or cream cheese, with honey, maple or agave syrup
Fruit fools ( 2 cups mashed raw ripe blueberries and 2 cups whipped cream, blend together and serve in glasses/Scottish version same amounts plus 1/2 cup "old fashioned" rolled oats and 1/4 cup scotch whisky.
Toast the oats in a dry skillet and allow to cool.
Mash the berries and add the whisky.
Blend everything together when the oats are cool, also serve in glasses..may drizzle with honey to finish)

Add them in place of walnuts to any brownie recipe..these are great served cold with whipped cream or ice cream.

Add to any slaw recipe..for extra texture
