RECIPES: Salad dressings from South America, Drinks and Entrees From Central America and Jack Daniel's Cake, Apple Crisp with Almond Topping From North America

From South America

Salad dressings

Orange-nutmeg salad dressing

I am leaving the greens and vegetables to your choice or availability this is just the salad dressing :

6tbsp olive oil
1 tsp ground black pepper
1 tsp fresh grated nutmeg
3 tbsp lime juice
5 tbsp orange flower water
juice from one ripe orange (1/2 cup)
the zest from same orange
1/2 tsp sea salt

whisk in a bowl and serve at room temp over salad greens



Ginger- Agave  ( also may use Honey) Dressing/dip

2 tsp black pepper
2 tsp sea salt
3 tbsp minced/grated fresh ginger
2 tsbp agave syrup
1/2 tbsp olive oil

Blend or process, serve at room temp...allow it to sit for 1 hour, for flavors to develop before serving.

This is great with bitter greens..arugula, radiccio






From Central America

Drinks

Refresco Regio..Royal Refreshment 10-12 servings

2 peeled oranges, chopped or segmented
1 pound fresh pineapple in 1 inch chunks ( or a can or pineapple in it's own juice not syrup)
1 pound fresh hulled strawberries, halved

place on a  wax paper lined cookie tray and freeze

1.5 litres  dry white wine chilled
1 cup brandy ( 6 ozs)
1/4 cup agave syrup

mix well together in a large jug or bowl, add the frozen fruit and top up with the carbonated water/lemonade

Serve with frozen fruit in the  glasses
2 cups chilled carbonated water or lemonade


  Margaritas en Jarra    Pitcher Margaritas  (Mexican)

2 cup crushed ice ( place ice cubes in seal-able plastic bags and smash with a rolling pin)

1 cup tequila ( 8ozs)
1/3 cup fresh lime juice
1/4 cup powdered sugar or 3 tbsp agave syrup
3 tbsp triple sec

1 tbsp egg white ( optional)

Blend everything on high until smooth and frothy.
Transfer to a chilled pitcher with slices of fresh  lime

Serve in chilled, salt rimmed glasses

Entrees

Tacos de Queso Cheese tacos. ( Mexico).serves 4-6 depending how hungry you are

1/2 cup chopped onion or 4 scallions
16 ozs chopped canned tomatoes
1x 4 ozs can chopped green chili peppers
1 tsp dried oregano, rub through finger when adding to release the oils
12 x 6 inch flour or corn tortillas
8ozs grated  Cheddar or Monterey jack
1 cup sour cream


Pre heat oven 350F

Saute the onion in a little oil and add the un-drained tomatoes.
Add the chili peppers and oregano and simmer for 20 mins, till very thick.

In another, dry skillet, heat the tortillas one by one until they  become pliable, place between 2 cotton towels to keep warm.

Place a spoonful of the grated cheese down the middle of each tortilla and top it with sauce.
Fold over and place on a greased cookie sheet, bake covered in foil for 8 mins.
uncover and bake 3 mins more, then just before serving open tortillas and add a spoonful of sour cream serve with fresh salsa

Poached Eggs- Huevos Rancheros.Ranch Style Eggs LOW FAT ( Mexican).for the morning after or late supper
( if tortillas are not available use good whole wheat bread)

serves 4-6

6 x6 inch corn tortillas
Normally the tortillas are fried but these will be just heated in a dry skillet, and kept warm between cotton towels

1/2 cup chopped onions or 4 scallions
2 cloves garlic minced
2 cups chopped fresh tomatoes
2 fresh jalapeno, seeded and finely mined or 1 x 4ozs can chopped green chili, drained & rinsed
1/4 tsp sea salt
6 large eggs
8ozs jack or Cheddar cheese

In a large skillet saute the onion and garlic in 1 tbsp cooking oil, until translucent.
Add the chopped tomatoes, and green chili. Cook for 5 mins.

In a large ( 10 x 6 x 2 inch) heat proof dish or baking pan, grease lightly with butter, and lay the warm tortillas overlapping .
Cover with the tomato-chili sauce. coer with foil and keep warm in a 300f oven.

Poach the eggs in hot water with 1 tbsp vinegar, and cook as needed, leaving the yolks soft, remove with  a slotted spoon and drain well, then place on top of sauce and tortillas.

Sprinkle with cheese and place under broiler for  1-2 mins until cheese melted, not browned.
Serve I with green salad or strong black coffee, or avocado and salsa

Desserts

Jack Daniel's Bourbon, Lane Cake..from Alabama, USA
..sorry but there is no substitute for true Jack Daniel's but you may use whatever liquor you prefer, whisky, brandy, rum..also substitute walnuts for the pecans in the filling.
 for 1x 3 layer 9inch cake

pre heat oven 350f

1 cup softened butter
1 3/4 cup sugar

3 1/4 cups all purpose flour
1 tbsp plus 1 tsp baking powder
1 tsp salt

1 cup ( 8ozs) milk
1 1/2 tsp vanilla extract

8 egg whites beaten stiff ( the yolks are used in the filling)

1 1/2 cups whipping cream
1/3 cup powdered sugar
3 tbsp Jack Daniel's bourbon whisky



Beat butter and sugar until light and fluffy.
Combine the flour, salt and baking powder, and add to the butter mix alternatively with the milk, (cream, vanilla extract, Jack Daniel's, and powdered sugar) (also mixed together), finishing with the dry  ingredients.

Fold in the egg whites.

pour into 3 buttered and floured 9 inch round cake pans and bake 25 mins in middle oven, or until tops feel firm.

Remove from oven and cool in pans for 10 mins.

remove and cool cakes on a wire.

When perfectly cold, fill layers and sides with the filling:

8 egg yolks
1 1/2 cups sugar
1/2 cup butter

1 cup chopped pecans
1 cup shredded coconut
1 cup chopped raisins
1 cup chopped dried apricots
1/3 cup Jack Daniels

Over simmering hot water, in a large bowl, whisk the first 3 ingredients until light and thick ( do not allow the bowl to touch the hot water or the eggs will scramble).
Once thickened remove from heat and stir in the remaining ingredients.

Cool to room temp then frost the cake as desired.

serves  4-6


pre heat oven to 325f


Apple filling:

8 cups peeled, cored and sliced eating apples ( approx 8 large apples, good if you mix the varieties)
1 tsp gorund cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/3 cup brandy or apple juice
1/2 tsp vanilla extract

In a large bowl toss all above togetherwell then spread into a greased 10 inch  deep-dish pie pan.

Topping:
1 cup all purpose flour
1cup  brown sugar packed
1/2 tsp sea salt
1 stick butter, sliced
1/2 tsp almond extract

Make as for pastry with either 2 knives or a pastry cutter, cutting the fat into the flour mix, when fine like breadcrumbs add the nut  and combine well..then top the apple mix.
OR process the whole until breadcrumb like texture forms.

Bake for about 1 hour, or until the topping is golden &  crisp and the apples are tender.

Serve warm with pouring cream or ice cream

1/2 cup sliced, toasted almonds, finely chopped
