RECIPE : APPLE, BANANA & ROASTED PEANUT SALAD

I have to admit I was unsure about this combination ..but it really Rocks!..crispy, creamy and nutty...and all in a salad!!
I originally wanted to use this recipe as a side salad, but found everyone ate it before anything else..so it IS great by itself in a large bowl.




This recipe makes 4 servings but you will probably have to double it....
if you have any peanut allergies try it with roasted salted almonds, or even broken pretzels..Honestly tasty!



2 pounds /8 medium ripe dessert apples OR 6 sweet and 2 tart 

3 medium sized ripe bananas

2 cups roasted salted nuts

Zest & Juice 1 lemon ( 2-3tbsp juice)

1 cup mayonnaise
1/2 cup sour cream
mixed well to combine
OR
1/2 - 1 cup any salad dressing (Oil & Vinegar, Ranch, Italian & etc.)

Romaine lettuce (or any crisp salad green), washed and drained well, air dried & torn into bite sized pieces

Method:
Wash and dry the apples well.
Core them but don't peel and cut into bite sized pieces, place in a salad bowl
Add lemon juice and zest.
Add the peeled bananas also cut into bite sized pieces, and mix well.
Add 3/4's of the roasted nuts toss to combine well then add the salad dressings, mix to completely coat.
Serve on chilled plates of torn lettuce, top with the remainder of the roasted nuts and serve.

This is a wonderful salad for those hot lazy days, and can easy feed a crowd
