Thai style curried vegetables with chickpeas; Spanish Style "Paella" with cashews; Mexican style red bean and Nopales stew; Spring vegetable soup..ALL VEGAN MENU IN PHOTOS FOR TOMORROW'S DELIVERIES

MEXICAN STYLE STEW..the green strips are cactus, that has been de-thorned, chopped and boiled in salted water with tomatillo skins (to reduce the sliminess), then drained and rinsed added lime juice and then added to the stew, they regulate blood sugar and taste like lemony green beans.

Thai style chickpea and ginger curry, with lemon grass, mint, basil, coriander and cardamon..finished with green beans and coconut milk

Cashew"paella" almost a risotto and one of my most requested dishes, will be completed tomorrow before delivery with more cilantro,cashews and tomatoes

Mexican Stew will marinate overnight




2 previous, the Spring Vegetable soup, Sugar snap peas, asparagus, green beans, corn, carrots, celery, onions, garlic, zucchini, and finished with own grown parsley

Just blended carrot and cilantro soup, with basil and cumin

"Paella" vegetables before adding the rice, colored/flavored with smoked paprika and ground turmeric
