CHEESE AND POTATO PIE..simple, delicious, economical meal for 2 RECIPE (may be made Vegan too) Globally Adjustable British Farmers Wife's recipe from over 100yrs ago



Here is a great last minute supper dish or maybe a lunch and serves 2.


1 pound peeled starchy potatoes
4tbsp butter or marg, (may use Vegan)
3 tbsp milk (nut milk is fine)
salt & pepper to taste
1/2 cup quick cook (not instant) oatmeal
2tsp mustard (optional)
1/2 cup grated cheese (may use vegan)

1) Cook the potatoes, sliced in a little water with salt added, drain and mash them with 2 tbsp butter and the milk. Add ground pepper to taste

2) Grease with the remaining butter a 8inch deep pie plate and add the mashed potatoes, forming a pie "crust".

3)Melt the 2 tbsp butter and add the rest of the ingredients to this, spread this mix on top of the potatoes.

Bake in a preheated 400f oven for 15-20 mins until golden brown

( if you make this ahead then bake in 350F oven for 30 mins.)

Variations: add any cooked left over vegetables, can be topped with sliced tomatoes as in photo.
Add any fresh herbs or spices of choice.
This is also great with baked beans or any cooked dried bean, for extra protein.
These can also be made into individual pies.
