Fruit crumbles, Fruit salads, Greens..More good ways to enjoy GOOD Veggies and fruits...and it's no joke!



April 1st Los Angeles..waiting for the "shoe to drop"..not many hoax's going on, will wait and see how the day develops.

Here are some great ways to "fool" your family into enjoying more fruit and vegetables in their daily meals..tasty too.

Vegan Yam and millet "burgers"..mashed roasted yams, and cooked millet with veggies and herbs & spices ( make them as spicy as you like), Keep overnight in fridge to "set up", mold into patties and roll in sesame seeds, bake in 375f oven for 30 mins. Serve in toasted pita breads with tomato-mango salad..moist flavorful and fabulous..packed with vitamins, protein and minerals..make it YOUR way with whatever you have on hand

Not an ordinary fruit crumble..this one is whole wheat, with oatmeal too; with strawberries, raspberries, fresh pineapple and dried figs. This is packed with flavor and high fiber.2 1/4 cups whole wheat flour, 1/2 cup butter, 1 cup brown sugar, 1/2 cup old fashioned oatmeal,  2 tsp ground cinnamon..blend in a processor, top poached fruit and sprinkle with sugar bake 375f for 30 mins until brown on top 



Collards with grated carrots, zucchini, red pepper flakes, onion with mint and basil


These 2  the mango-apple-tomato salad with orange and grapefruit segments, chopped jicama orange and grapefruit juice, fresh mint and cilantro..this is for the "burgers" in pita bread..very fresh flavored and fabulous..high flavor no salt and no oil

adapt this idea & use whatever you have on hand that is local grown and seasonal..fresh mint makes everything taste fresh and light..no need to chop it just add the leaves whole.
