Victorian English Farmhouse Orange Delight Tarts.RECIPE.here's something old yet so very trendy




As great and sweet Navel oranges are in season now this is a wonderful dessert and makes 2 x 8 inch tarts.

This recipe originated in the North Country of England in the 1900's, made by farmers wives and country folk.
It is very simple and very delicious..

Preheat oven 350f middle shelf

Pastry to cover 2 x8inch sandwich cake pans

2 large naval oranges, peeled, and all white pith removed then very thinly sliced into rings

Lemon curd to cover the bottom of both tarts


Place the lemon curd in a  1/4 inch layer over the unbaked pie shells and cover each one with the rings of an orange, over lapping if necessary.

The cover with the following mix:
1 egg and it's weight in butter, sugar and flour ( approx 2-3 ozs of each)
1 heaped dstsp corn starch (corn flour UK)
1/2 tsp baking powder
1/2 tsp salt

Sift the dry ingredients together in a bowl.
Cream the butter, sugar and egg together in another bowl, then add the dry ingredients and beat well.
Spread over the 2 tins and bake for 20 mins

Allow to cool slightly and serve warm.
