Freezing Fresh Asparagus..photos and tips

Cook the trimmed asparagus (cut off first 2 inches of stems and use in stocks and soups) for 2 mins in boiling water with 1/4 tsp baking soda..plunge into very cold water and allow to drain for 30 mins.

lay the drained asparagus flat on a pan/tray covered with parchment or wax paper and freeze flat..pref. over night

These are frozen solid..& because they drained well they separate when packing

Frozen solid ready for packing..do not load the bags too much and freeze ...this also works great for green beans and berries


These can be used in any stir-fry or any vegetarian entree and as it is Asparagus season..these cost just $5 for 2 pounds!
