Vegetable Korma; Pinto Bean and kale soup; Minestrone soup; Raisin Oatmeal cookies, International comfort food for the Los Angeles April rains

We are actually getting some very much needed rain in the LA basin, and snow on local mountains today, and the weather is sunny with high, cooler winds.
This cooler weather is coming from the Gulf of Alaska, and blowing due east, so the air is very clean and fresh...I love this weather.

With this in mind the menu for tomorrow is lots of warming, comfort dishes:

 These 2, the pinto bean and kale soups.
Cook the beans the night before.
Then add chopped onion, garlic, celery, carrots and cook with bay leaf and ground cumin and coriander for about 1 hour, first on rolling boil then on medium simmer, uncovered.

Add salt and ground pepper to taste..with this soup it is important that the kale is cooked well


Minestrone for the American taste has to include basil..and again cook it down well to develop the flavors before adding any pasta
 
Cook the KORMA vegetables in some good vegetable stock with the spices and when tender remove.(see below) then reduce the sauce by simmering and finish with coconut milk
