Minestrone Soup; Pasta e fagiole; Split pea and vegetable soup; Coconut sauteed vegetables with thyme-whole wheat crepes; Roasted Strawberries topped with vanilla sponge cake Photos of Prep


Split pea soup with carrots, onions, celery, rutabaga

Fresh basil topped pasta e fagiole..I used cooked pinto beans and alphabetti pasta this time..also finished with olive oil

Minestrone soup with celery, peppers, corn, carrots,  green beans,onions, garlic dried basil, dried thyme

Red cabbage, carrots, onions, garlic and cooked potato..filling for some whole wheat empanadas will post photos tomorrow..will be served with a  side of jicama-tomato salad

These 2 whole wheat and thyme crepes for the coconut sauteed vegetables


The vegetables for the crepes..yams, eggplants, onions, garlic, orange bell peppers..sauteed in oil then add veggie stock and coconut cream and simmer until all cooked and tender
Roasted Strawberries..roasting concentrates their flavors

Vanilla spongecake topped roasted strawberries to be baked
