Great Gratins, pasta Sauces, waffles and breads..Vegan/Vegetarian Winners


A bumper menu for Monday's Full Moon..also something to enjoy after all the festivities in Hollywood celebrating the Oscars.

Some of my Client's are in the "Biz", so they chose dishes that remind them of home and comfort after a night of partying with the Stars!




The menu for Monday:

My original Coconut "cream" of tomato soup ..I added yams to this mix so it blends , and I partially blended the soup so there are chunks of fresh veggies in a rich coconut-tomato base, finished with own grown chopped basil.





(I also make my own coconut milk..using frozen fresh coconut from Thailand, blended with filtered water..this make a rich cream great for soups, sauces and gratins., also I never know how long the canned stuff has been hanging around in the stores, or how it has been stored ( away from heat/direct sunlight)




The entrees are:

Whole wheat pasta or gnocchi with Putanesca sauce with added mushrooms ( basic Marinara sauce with added rinsed and chopped capers and olives) also packaged one without olives as client request.




2 Gratins:

One Vegan with mushrooms and potatoes, with re fried beans for extra protein. The re-fried beans ( pinto beans, very high fiber) give a good thick texture and dense flavors. This mix will be layered with steamed potatoes.

  the other Vegetarian featuring rice and artichokes with garlic, red onion  and cheese.
The photo below is the filling for the artichoke gratin with added yams, and grated lemon peel and parsley form the garden



My now 'infamous" Corn Crepes ( using Masa  corn flour and whole wheat flour)  with roasted yams, tomatoes and feta cheese, with a tomato-lime salsa.
This is a wonderful dish..photos tomorrow.



  Desserts/breads 

Cranberry-walnut  oatmeal cookies








Banana-walnut sour dough flax seed waffles (dairy-free and very filling)







Poppy seed sourdough bread. ( photos are of before a 4 hour prove at room temp. today's daytime temps are mid 70f's)

    everything looks fabulous and munching the last of Eve's pudding which has fermented by now and I am quite tipsy while watching the Oscs.
