Hungarian style beet soup, Tunisian style Chickpea stew, Kale & mushroom stew, and other great winter warmers

 A delicious Global Menu for delivery Tomorrow, without the need to pack any bags..enjoy


OK so we are going to begin our travels this week:




 In Eastern Europe with a dense and very colorful vegetable ( the ground paprika adds a glorious red color without affecting the flavor)and white bean stew that features purple beets, tomatoes, dill seed, caraway seeds, cannellini-white kidney beans and is very very tasty. Finished with own grown parsley ( our latest winter storm dumped snow on local mountains last night, and my herbs are loving the cooler rain)
This could be finished with pasta or even sour cream/live yogurt.

Next we land in Athens, Greece for some great lentil and oregano "burgers/patties"..these are made with own cooked lentils and chickpeas, with deep flavors of garlic, cumin, coriander..these will be shaped with toasted fresh brown breadcrumbs with more oregano, and baked at the client's home, served on toasted English muffins and complimented with own made peach chutney (from last summer).

Next heading west we stop over in Italy for a fabulous baked pasta dish of eggplants with cinnamon, tomato based sauce,fresh basil leaves ( I always have basil growing) and added ricotta and grated Parmesan cheese.
Organic whole wheat pasta...again this will be baked at the client's home...This will be photographed tomorrow before delivery.

Next stop North Africa for 2 deliciously different, nutrition dense stews, one with yams ( may substitute butternut squash) and chickpeas cooked in a tomato-green chili sauce, finished with chopped cilantro.

A mushroom, ginger and kale stew, I added some Russet Potatoes for texture, the root ginger adds a great lemony flavor. This also has the addition of roasted sunflower seed butter. Both these stews will be served with steamed millet.

Two great side dishes:
Roasted purple beets with raw pumpkin seeds, finished with pomegranate molasses..adds a great sweet-sour flavor, better than balsamic vinegar.

Red cabbage stir steamed with sesame oil & kale, with lots of fresh garlic

And for a special order, some oatmeal, whole wheat, carrot- ginger cookies..these are great and remind me of carrot cake without all the calories.
