RAINFOREST STYLE ALL SEASONS SALAD..FABULOUS LIGHT AND LUSCIOUS RECIPE


I posted this before on my website but now that is used just for local business so I am re-vamping it on my Vegetarian blog ( this one) and making it not just global but also all seasonal.
It is also one of my all time favorite recipes


The main thing is the dressing, everything else can be modified but this dressing is the TOPS:

this makes enough for 6 salads and it ia great to keep a jar of it on hand as it is terrific on anything.

2 tsp sea salt
1 tsp ground black pepper ( I prefer coarse ground/cracked)
1 tsp grated nutmeg..try and grate it fresh.. it makes all the difference
2tbsp lime juice
the zest of both limes
5 tsp orange flower water..this is a MUST
1 tsp orange zest
6 tbsp good extra virgin olive oil
 Plus:
the juice from the oranges that go in the salad.
Mix everything in a jar and shake to combine
 Store it in the same jar and shake vigorously to serve



The salad ......serves 4 good main course sized salads

1 cup chopped fresh squash (zucchini, Chayote, green squash, yellow & etc )
OR  1 cup chopped radish
OR 1 cup chopped Jicama
OR 1 cup chopped cooked beets
OR 1 cup chopped carrots
OR 1 cup chopped peeled and seeded cucumber

marinate this in 3 tsp of the dressing for 20 mins.


when it has marinated, then add it to :
4 cups dark GREEN  salad greens:
Field spinach
or
Dandelion
or
Arugula/Rocket 
or
Romaine/Coss
or
Baby greens
or
Butter lettuce
or
Cabbage sliced very thin
or
Kale and Greens Sliced very thin 
or
Beet Greens
or
Watercress
or any mix of the above

Place the dressed greens and squash on serving plate and arrange over top:
2 cups orange* segments ( this has to be down before dressing any of the salad as the juice is part of the dressing. Peel the oranges then segment, over a bowl, reserving the juice for the dressing).

1 x14oz can Hearts of Palm cut in 1/2 inch slices..washed and drained
OR
1 x 8oz can whole water chestnuts, washed and drained and chopped
OR  1 pound Jerusalem artichokes cut into 1/2 slices
OR 1 Jiacama cut into 1/2 inch slices

Top this with 

1 cup any roasted unsalted nuts of choice

serve extra dressing in a sauce boat for guests to add as needed...enjoy a quick vacation in South America.


The salad has to have the following :
2 crunchy elements (in place of toasted nuts try croutons or toasted noodles)
1Very Dark green salad base
a citrus element that is also part of the dressing



 * in place of oranges use 
Ugly Fruit,
OR
Red or White Grapefruit

Make it yours by using whatever is seasonally growing in your neighborhood/markets and enjoy this fabulous gift from the Rainforests
