THIS IS THE BEST RECIPE EVER!! Golden Bread/Pandorato with Red Onion Marmalade..Recipes

This originated in the province around Rome, Lazin.
Great thick mozzarella filled sandwiches, bathed in milk & eggs, fried and served with a tart orange-red onion marmalade.

serves 4

The Golden Bread:

8 x 1/2 inch thick slices of wheat bread, crusts removed
1 pound mozzarella* cheese cut into thin slices
salt & pepper
hot sauce (optional)
1 cup milk (nut milk is fine)
2 large eggs beaten
grated zest 1 orange or lemon (optional)
vegetable oil for deep frying

Layer thin slices of mozzarella cheese, overlapping on 4 slices of bread and cover with other slice of bread, pressing down well.

Dip the sandwiches in milk (do not soak) and then set on a large platter.
Beat the eggs with the grated orange zest and pour over the sandwiches.
Leave to soak for 2 hours.


Heat oil to smoking and gently dip each sandwich in  into and cook until golden brown. Cook in small batches to keep the oil hot and clean. Drain on wire rack or kitchen paper
Serve hot with green salad and red onion marmalade on side.
Allow the guest to cut their own sandwiches so the cheese runs out.
* you may substitute any good melting cheese


Red Onion Marmalade

2 cups thinly sliced red onions
1 cup thinly sliced, whole oranges (slightly under ripe preferred)
2 cup fresh orange juice
2 tbsp capers, washed and drained
2 tbsp brown sugar

Place in a non-aluminum pan and slowly simmer for 45mins-1 hour until volume is halved,* do not boil.
Serve in a dish and serve at room temp.
*It should have the consistency of chutney not jam, and be chunky not all mixed together.
