RAINFOREST WILTED GREENS SALAD..GLOBAL RECIPE

Here is something very special and can be made with any tough greens, including kale and red & Green Swiss Chard, Radicchio & Curly Endive works well ..at a stretch maybe use dandelion greens too.
The important thing is that the greens must be sliced very thin.(chiffonade)



Serves 4

2 bunches, well washed and drained, collard greens ( 8-12 leaves)
3tbsp olive oil
4 garlic cloves smashed and minced
2tbps Balsamic vinegar
salt & cracked pepper to taste

2 cups croutons (fried or toasted bread cut into cubes)
2 bell peppers, grilled seeded and diced

1 cup raw sunflower seeds or chopped raw nuts/pumpkin seeds

Gently remove the stems from the greens.
Roll the leaves up in bunches of 3.
Then slice very thinly.
Place the "shredded" greens on a cookie sheet and cover with a clean wet cloth, until all are sliced.

Warm the olive oil in a skillet, then pour this over the sliced greens and mix well.
Do the same with the vinegar, then pour over and mix well.
Season to taste.
Pile onto serving plates and sprinkle with the raw nuts/seeds, arrange croutons & grilled pepper pieces on top..serve immediately.
