healthy and Delicious RAW, Avocado, Zucchini, Tomato, Cucmber Soups RECIPES FOR BETTER HEALTH



These recipes are a "step up" from plain old  vegetable juices, and they are the Latest Thing in Hollywood for weight loss or maintenance.
Very fresh,  healthy and dare I say it, Vegan..although most can be served with a spoon of plain live yogurt.
serve as you would with any soup, fresh breads, crackers, chips & etc.

Make sure that all the vegetables are washed well and air dried

Each recipe is for 1  main course serving

Kelp (sea vegetable) & tomato soup
1 tbsp extra virgin olive oil
2 scallions chopped
3 ripe, medium tomatoes
1 cup carrot juice ( or apple juice)
2 tbsp sea vegetables ( hydrate in a little filtered water, drain well before adding to soup)
1/2 clove garlic
1tbsp fresh basil leaves
Blend everything together and garnish with sunflower  or pumpkin seeds



Zucchini soup
2 cups diced zucchini
1 cup lettuce
1 cup water
1 tbsp extra virgin olive oil
Blend together and garnish with drained sea vegetables

Avocado soup
2 ripe avocados..peeled, scooped and coarsely chopped
1 cup bean sprouts
juice 1/2 lemon
1tbsp sea vegetables (rinsed & drained)
1/4 cup ripe bell pepper
1/2 cup chopped celery
2-3 cups filtered water
Blend then add the lemon soaked avocado pieces and mix well

Cucumber soup
1 cup chopped cucumber ( if American  peel and de-seed)
1 ripe avocado
1 ripe tomato
1 cup carrot juice
2 clove garlic
1tbsp sea vegetable rinsed and drained
juice 1 lemon
2tbsp minced mint

Blend everything except avocado and mint, add the avocado coarsely chopped and mint before serving.

Sea Vegetables..always soak overnight (unless they are toasted sheets of nori) or for a couple of hours before use, then drain and rinse.
This removes any excess salt/brine flavors.
Sheets of dried toasted Nori can be crumbled and added as garnishes.
