MACERATION another secret to better flavored fruits and vegetable dishes, plus tomato soup; Tuscan bean & Greens soup; Vegetable-tomato pasta sauce photos

MACERATION is the  technique of sprinkling CUT/SLICED FRUIT  with SUGAR. (SEA salt and sugar works well on berries -strawberries halved or sliced and raspberries etc, slightly crushed), CUT/SLICED VEGETABLES with sea salt, to DRAW OUT their juices/moisture. This also tenderizes the fruit and vegetables for easier digestion. it is best to leave them overnight or a minimum of 2 hours at room temp. MARINATION is the opposite and is a technique of ADDING moisture/flavor to fruit, vegetables, meat and fish, USUALLY HERBS, OILS OR WINE
