Here is another "no nonsense" BASIC Vegan recipe using items most people have in their store cupboard or local markets..I prefer all my recipes to be made with produce globally available, rather than find a great recipe and then realize half the ingredients have to be shipped in.
Serves 6
3 cups shredded cabbage (can be green or red)
1 cup raisins (or dried fruit chopped small)
1 cup raw cashews ground in a spice grinder or mortar & pestle
1 cup grated apple either sweet dessert or tart
1/4 cup plant based/tree nut "milk" or filtered water
2tsp brown sugar
2tbsp cider vinegar
1/2 cup minced scallions/onions
sea salt and ground black pepper to taste
Method:
In a medium bowl mix the cabbage and fruit, add salt & pepper (a little salt will begin to break down the cabbage)
in a small bowl add water, gradually to the ground cashews to make a smooth paste. Set aside
Dissolve the sugar in the vinegar and add to the cashew paste..pour this over the cabbage and fruit and mix well
serve immediately.
Do not dress ANY CABBAGE SALADS AND THEN SET TO CHILL AS THE ACID AND SALT IN ANY DRESSINGS WILL CAUSE THE CABBAGE TO RELEASE IT'S MOISTURE AND THE SLAW WILL BE WET.
But DO add anything to this basic recipe to make it your own:
Grated carrots, peas, green beans,beets,chopped celery, bell peppers, hot peppers, parsnips, cilantro, parsley, basil, fennel, dill seed, poppy seed, mint & etc.
