Vegan FAT-FREE "mayonnaise" Salad dressing and ideas for slaw salads
As we in Southern California are headed for another heatwave this week...
this is perfect addition for any warm weather salads
This is an easy recipe and uses Raw cashew nuts as the main ingredient.
Cashews are really a dried legume and not a nut, just as peanuts are also a dried legume.
Here is a basic recipe and makes 1 1/2 cups enough for a salad for 4-6 servings
1 cup raw cashews..ground to a flour in a herb grinder/food processor or mortar and pestle
1/4 cup filtered water
1/4 cup agave syrup (for vegetarians use honey)
2 tbsp cider vinegar or lemon juice
Sea salt and black pepper to taste
Mix together well in a blender to a thick paste, then dress salad
Variations:
add 2 tbsp any fresh herb
add hot sauce
2tsp any cooked spice (heat in olive oil for 2 mins on low before adding to any raw sauce)
add scallions/garlic or red onion
use in place of any regular mayonnaise
This is great served with ripe melon and berries.
use on any slaw: shredded green,napa and red cabbages
dried fruit, fresh fruit, salad vegetables.
This is also great used on any warm salad
Wonderful as well on steamed vegetable..may also add some toasted sesame oil for Asian flavors.
Add to a warm new potato salad with shredded fresh mint..fabulous!
This is a wonderful addition to any menu for the summer months and warm temperatures does not affect it.
