Here is something that has become less popular as of late, yet when made well is really delicious and another way of using more whole grains.
1 qt scalded milk
5 tbsp cornmeal (polenta medium grind)
2large eggs beaten
1 tsp sea salt
1/2 tsp ground ginger
1/2 tsp ground nutmeg
2tbsp butter
1 cup unsulphured molasses
1/2 cup raisins
ice cream or whipped cream to serve
Preheat oven 325F
Pour the milk over the cornmeal in a saucepan and slowly bring to boil, stirring constantly, until mixture thickens..approx. 15mins.
Remove from heat and cool for 10 mins then add everything else (except the ice cream & whipped cream).
Pour this corn mix into a greased deep baking dish and bake, on a cookie sheet for 1 1/2 hours.
remove from heat and wait 10 mins then serve warm with ice cream or whipped cream.
