Here is a great way to eat more fruit and enjoy a homemade gluten-free cookie.
This recipe makes 12 cookies
Preheat oven 350F middle shelf
2 large eggs well beaten
1/3 cup roasted nut butter (peanut, almond, sunflower seed & etc.)
1/4 cup molasses (if using black treacle use 1/2 cup)
1/2 cup brown rice flour
1/2 cup chopped walnuts or other raw nut
1 very ripe banana mashed or chopped
1/2 tsp cinnamon
1/4 tsp sea salt
In a large bowl combine all the ingredients, and pour into a greased 8 inch square baking pan.
Bake 15 mins in middle oven
Remove from heat and cool in pan on wire rack
Cut into bars while still warm
Serve cold/room temp
