MELON & CHEESE SALAD : RECIPE
This is a great lunch box salad...very nice and light too.
It is vital that you use a ripe melon, and please do not buy any melon already cut in the markets...they are never cut when they are ripe..as their shelf life is limited, and also one never knows when it was cut.
I like the green fleshed melons best but the choice is yours
This serves 2
1 large ripe melon Cantaloupe, honeydew, & etc. (3 cups) peeled and cut into bite sized pieces
1 cup grated or cubed firm cheese (Swiss, Cheddar, Monterrey Jack & etc,)
1/2 cup raisins or apricots chopped
1/2 cup raw sunflower seeds (kernels)
2 cups trimmed, well washed and air dried watercress or baby spinach
Lemon juice or preferred salad dressing of choice
Combine the melon, raisins, sunflower seeds, cheese.
Pile onto the watercress divided onto 2 plates.
Drizzle with fresh lemon juice or dressing.
serve immediately
Variations:
Try this with feta cheese or blue cheese.
And replace the sunflower seeds with fresh shredded coconut
