Noodle Casserole..vegetarian cheese or sweet side dish RECIPE
This is a great duel purpose recipe for both a savory pasta bake/kugel/casserole OR a sweet one....either is fantastic and as they are made with yogurt instead of the usual sour cream, they are lighter too.
These make 6 servings each recipe
1 cup ricotta cheese or large curd cottage cheese
1 cup live plain yogurt ( not Strained/Greek)
1/4 cup melted butter
sea salt & ground black pepper to taste
1 large egg lightly beaten
1/4 tsp ground/grated nutmeg
1/3 cup grated/shredded Parmesan cheese
8 ozs whole wheat noodles cooked al dente, drained and rinsed in cold water.
Preheat oven to 300f
In a large bowl mix all ingredients well and pour into a buttered deep casserole.
Sprinkle a further 1/3 cup grated cheese.
Bake on a cookie sheet 45-60 mins until golden brown.
Remove from oven and wait 10 mins before serving.
For a sweet version:
Omit the pepper & cheese instead use 1/2 cup raisins or chopped dried apricots(I also like this with chopped pitted prunes) or cooked apples.
Add1/2 cup brown sugar
Add 1/2 tsp ground cinnamon
Top with crushed cornflakes or ground/sliced nuts & more ground cinnamon or nutmeg
