Grate Salad........Recipe.......feeds 8 ........grate eating too
Grate Salad.....yes using one of the first food processors..the grater
This salad is a wonderful mixed vegetable salad and utilizes broccoli stems, instead of the florets!
Feeds 8
3 cups grated green or red cabbage
2 cups grated carrots
1 cup grated, peeled broccoli stems
1/2 cup toasted sesame seeds
2 cups diced tomatoes or cherry tomatoes halved
2 avocado's pitted and cubed (toss in fresh lemon juice to prevent discoloring)
1 cup chopped peeled and seeded cucumber
1 cup chopped celery
1/2 cup chopped red bell pepper
1 cup chopped raw or toasted nuts
Mix everything together except the avocado and chill for 2 hours
When ready to serve, dress lightly keeping some dressing in a serving jug and top with avocado.
Dressing:
1 cup olive oil
2 cloves garlic smashed and minced
1 cup lemon juice
1/4 cup honey or maple syrup
2 tsp prepared mustard
sea salt & ground black pepper to taste
Mix in a jelly jar, and securely lid, shake well, and chill for 2 hours.
Shake well before using.
May also add fresh herbs in season and watercress/arugula, and any grated hard cheeses.
