Spanish Style Sweet Orange & Grapefruit Salad : RECIPE
This is another recipe from my Ibiza Hot summer Days
Today's record breaking 90F's temps have made it very hot to work in and made me crave lots of nice cold and fresh flavored salads.
This is one of my faves...so simple and so very good to make now as the sweetest navel oranges are in the markets now.
And the wonderful Texas red grapefruits which are very sweet and easy to peel or the tart white ones which are more refreshing.
This recipe serves 4
3 medium sized navel oranges
2 large grapefruit
Fresh ground black pepper and sea salt
1/4 cup extra virgin olive oil
1/2 cup walnut pieces
1/2 cup thinly sliced sweet or red onion
4 cups salad greens, washed and cut into bite sized pieces (watercress, romaine, arugula, spinach & etc)
warm whole wheat bread to serve
Peel 2 oranges and one grapefruit and just pull out the sections*, and place in a bowl.
The orange and grapefruit left, with a knife carefully peel (remove white pith) and cut into "fillets", pith-free segments.
Squeeze all the juice onto the fruit sections.
Add salt & pepper to taste and pour over the olive oil, toss well.
Cover tightly and chill for 3 hours.
Remove cover add nuts, onion rings and toss well and serve over plates of salad greens..serve with warmed brown bread to soak up the dressing
* a lot of citrus salad recipes call for all the fruit to be cut membrane free but I prefer my citrus whole, and the pith adds a nice bitterness to the very sweet spring fruit.
